How to cook - nut brittle

I got thinking girls, about sweets I used to eat when I was a little girl and that gave me an idea. I can show you how to make sweets in your own kitchen and send them to you to taste!

I thought we'd start with an old favourite of mine - peanut brittle!

Here is a YouTube video of me making nut brittle and below are the ingredients and recipe for you girls to follow. Make sure your Mum helps you with the oven and then go and make yourselves some!

Ingredients List:

  • Groundnut oil for greasing

  • 50g unsalted peanuts or any other nut you like!

  • 400g granulated sugar

  • 100g soft brown sugar

  • 150ml golden syrup

  • 100g unsalted butter

  • 150ml water

  • 1 / 4 teaspoon bicarbonate of soda

  • 45 minutes to make peanut brittle and 2 hours to cool.

  1. Preheat oven to 180 degrees Celsius / 400 degrees Fahrenheit / Gas Mark 4.

  2. Lightly oil a 20cm x 30cm x 2.5cm baking tin with groundnut oil.

  3. Get you Mum to help with this as it gets hot. Scatter 350g shelled unsalted peanuts on a baking sheet and place in oven for 10 minutes until golden – take care not to burn them!

  4. Put 400g granulated sugar, 100g soft light brown sugar, 150ml golden syrup, 100g unsalted butter and 150ml water into a deep heavy bottomed pan and heat gently until the sugar has dissolved. Don’t stir the ingredients, just let them sit and heat gently.

  5. Put sugar thermometer into pan and bring liquid to a boil. Boil very gently for at least 30 minutes probably more, until the temperature reaches 149 Celsius. Don’t be tempted to turn the heat up as the mixture is likely to burn.

  6. Put in 1 / 4 teaspoon bicarbonate of soda and the roasted peanuts. The mixture will then bubble to the top of the pan. Take the pan off the heat. Don’t put it onto a work surface as this will burn it as the pan is very hot.

  7. Carefully pour the mixture into the baking tray and leave it to cool. Then, when it is set, hit it with a hammer to break it up into pieces. Tasty!
