How to cook - cinder toffee

It's been really busy here for ages with moving house but I've found some time to show you girls another recipe!

So here we go Evie and Rose, here's what you need...

Equipment:

  • A big heavy pan

  • Spatula or spoon

  • Baking tin (17cm x 17cm)

  • Greaseproof paper

  • Whisk

  • Tea towel

  • Hammer

Ingredients:

  • Groundnut oil for greasing tray

  • 75g granulated sugar

  • 25g golden syrup

  • 100g liquid glucose

  • 1 tablespoon water

  • 15g bicarbonate of soda

Recipe:

  1. Cut out greaseproof paper to line the tray so that the paper comes up 3cm around the edge. Use a little oil to stick this to the tray and then rub some oil inside so that the cinder toffee doesn't stick to it.

  2. Put pan on hob and place the sugar, golden syrup, liquid glucose and water into it and stir. Make sure your Mum is there to help you use the hob. Put the pan on a low gentle heat to dissolve the sugar and make a syrup.

  3. Watch the pan very carefully from this point on! Turn the heat up slightly to make the syrup boil steadily for at least 5 minutes. The syrup will turn to the colour of marmalade.

  4. Turn the heat off and use the whisk to stir in the bicarbonate of soda. It will bubble up and become foamy, and will look like the inside of a Cadbury's Crunchie bar!

  5. Straight away pour it into the tray and let it settle into the edges. Then let it cool, which takes around an hour.

  6. When cooled, take the toffee out of the tin and take off the greaseprrof paper. Then put a tea towel over it and gently tap it with a hammer to break it into little pieces.

  7. Then eat and enjoy the sugary tastiness!
